NOT YOUR MAMA'S BOLOGNESE








My bf and I have recently jumped on the zucchini noodle AKA zoodles trend and we are HOOKED.

Zoodles are such a great, healthy alternative to traditional pasta and did I mention they are also delicious??! We just bought the Veggetti from Target and it's super affordable ($15.00) and easy to use. Saute them in a little olive oil with a a pinch of pepper and garlic salt and you are good to go.

Today, I wanted to share how to bring your zoodles or traditional pasta to the next level with my very own bolognese recipe. It is simple, healthy and so good I guarantee you will be going back for seconds. I love to make extra to use as lasagna sauce and you can also freeze it for a later day.

INGREDIENTS

  • 1 can of tomato
  • 1 can of tomato sauce
  • 1 can of tomato paste
  • 1 lb of ground beef
  • 1 small yellow onion
  • 1 bell pepper
  • 1 can of red olives
  • 3 garlic cloves
  • 2 tbsp of olive oil
DIRECTIONS
  1. Saute garlic, onion, and bell pepper in olive oil on medium heat until lightly browned
  2. Add in tomato sauce, tomato, and tomato paste and bring to a boil
  3. Turn temp down to low and blend ingredients until smooth with an emulsion blender (pictured above)
  4. In a separate pan, cook ground beef (or turkey) until golden brown and drain grease
  5. With a potato masher device press down on ground beef to make the chunks as small as possible
  6. Add ground beef and olives to sauce and let simmer for 25-30 minutes
  7. Serve over your favorite pasta or zoodles
